Happy Thanksgiving everyone! I hope you’re having a nice and relaxing day with your family and friends.
Like many Thanksgivings these past few years, I’m spending it at work. I hope you caught the Bears vs Lions game earlier today in Detroit!
Because I’m at the early game this year, I didn’t get to watch much of the Macy’s Thanksgiving Day Parade which is one of my favorite Thanksgiving traditions. Watching the Macy’s Parade has been a family tradition since I was a kid. I loved laying around and watching with my mom while she was hustling around the house getting ready for the day.
These days I’m covering the FOX NFL Thanksgiving Game, so I usually call my family from my hotel room around breakfast to connect before a busy day filled with travel, reporting and sometimes traveling to a second game on Sunday. Over the past few years, since we’re already together, we’ve always tried to do a co-worker Thanksgiving at our hotel or at someone’s house if we happen to be close enough.
As you probably know, my husband Jarret is Canadian and he hilariously celebrates American Thanksgiving more than I do! One of his teammates’ wives always hosts the guys every year and it’s so sweet. Because I don’t always get to have a proper Thanksgiving, I always try to eat Thanksgiving food on Christmas because I love it so much and don’t want to miss out on the Turkey and side dishes I grew up eating.
One of my all-time favorite dishes is green bean casserole. Not just any green bean casserole, it needs to have the cream of mushroom and crispy fried onion on top, it’s seriously the best! When we’re cooking Thanksgiving for Christmas I also love this stuffing from one of our local delis that includes sausage as a special ingredient. More recently I’ve become OBSESSED with this mashed potato recipe one of my girlfriends taught me as well. Just picture these ridiculously buttered mashed potatoes with heavy whipping cream on top—one of my favorites. Sometimes it’s just the ones that make your stomach hurt, you know?
I especially like to make enough of the green bean casserole and mashed potatoes to save for leftovers the next few days, which might be one of the best parts of Thanksgiving. Sometimes the leftovers are even better than the meal itself!
This Thanksgiving I’ll be at one of my co-worker’s who’s hosting everyone this year. However, maybe it’s crazy, he doesn’t do traditional Thanksgiving foods – ever. Instead he’s going to serve us a huge Italian meal. It’s a little different from what I’m used to, but the day is truly just about being together. That’s what really matters.
